Serves 4

500g sweet potato, peeled and cut into half moon shapes
Oil
1 can tomatoes
1 garlic clove, crushed
2 tbsps balti curry powder
150ml veg stock
1 x can butter beans, drained
1 red chilli, thinly sliced
75g spinach, chopped
2 tbsps chopped coriander
Method:
1. Put the sweet potato on a plate and microwave on high for 5 minutes.
2. Heat a wide non stick pan and heat a splash of oil. Transfer the sweet potato to the pan and cook for 20 minutes, turning over half way. You want them to be caramelised.
3. Meanwhile, put the tin tomatoes, garlic, curry powder, stock, butter beans, chilli and spinach into a saucepan. Bring to the boil and simmer for about 10 minutes. Add the sweet potato and coriander and stir to combine. Yum
