This is a really simple recipe. It’s colourful, tasty and really quick to make. The marinade is the star of this dish and feta is lower in calories and fat than other cheeses. It is a salty cheese though - so no need to add any additional salt when seasoning.
1. Whisk the olive oil, vinegar and sugar together. Stir in the onion.
2. Pour the dressing over the tomatoes and leave to marinate for 10 minutes, then sprinkle with the feta and mint.
