Tuna Nicoise
Ingredients:
2 tins Tuna (in spring water) or a large fresh tuna steak.
400g new potatoes, quartered.
large handful of fine french green beans
2 little gem lettuce hearts
2 eggs
16 pitted black olives in brine
For the dressing
1 tablespoon of extra virgin olive oil
2 teaspoons of red wine vinegar
1 teaspoon of dijon mustard
Salt and pepper
Method:
1. To make the dressing whisk together the red wine vinegar, olive oil and mustard. season and taste - adjust to your liking.
2. Boil the potatoes in salted water along with the eggs for about 15-20 minutes.
3. When the potatoes are almost cooked, add the green beans to the saucepan.
4. Drain the potatoes and green beans, peel the eggs and cut in quarter.
5. If you're using fresh tuna, fry in a pan for 2 minutes on each side. allow to rest and then slice.
6. Assemble the dish starting with the baby gem lettuce, potatoes, eggs, tuna, green beans, olives and drizzle over with the dressing.
Simples.....and done in one saucepan!
