Rosemary & Walnut Soda Bread
Ingredients:
200g self raising flour
a pinch of salt
30g chopped nuts (Walnuts are perfect)
2 teaspoons chopped fresh rosemary
100g fat free natural yoghurt
cold water
Method:
This is really simple!
1. Preheat the over to 200 (fan)gas mark 7. Sift the flour, salt and bicarb into a mixing bowl and stir in the nuts and rosemary.
2. Add the yoghurt, stirring with a spatula to bring the dough together to make a ball. Add some cold water if needed - one tablespoon at a time.
3. Spray a baking tray with cooking spray and dust with some flour, press the bread dough into the tray, making sure you push it out to the corners. Cut a cross shape on top.
4. Bake for 20-25 minutes or until the bread sounds hollow when the underside is tapped. A skewers can also be used. Insert it into the thickest part of the load and if it comes out clean, it's cooked.
5. Allow cool on a wire rack before cutting.
That's it! Simple.
