Banana Bread


This can either be made as a loaf or as 12 individual muffins



Ingredients

300g self raising flour

1 tsp bicarb of soda

85g muscovado sugar

50g porridge oats

2 very ripe bananas

284ml buttermilk

5 tbsps olive oil

2 egg whites

Method:

Heat the over to 180. Tip the flour, bicarb, sugar and oats into a bowl.

In another bowl mash 2 very ripe bananas and stir in the buttermilk, the oil and the egg whites.

Stir the banana mixture into the dry ingredients with a wooden spoon. It will look lumpy but don't over mix it. You can also add some blueberries at this stage.

Pour into a greased and floured loaf tin and sprinkle with more oats and a tbsp sugar.

Bake for about 20-25 minutes (loaf - check by using a skewer - if it comes out clean, it's cooked). Adjust timings to about 15-18 mins for muffins.
